Here's a great little recipe that can serve double duty. It's good as an appetizer with a spicy honey mustard, Dijon mustard or sweet & spicy sauce.
Also good as a dessert served with vanilla ice cream.
Whole Fresh Apricots
1 Cup Flour
1 Tbsp Cornstarch
1-1/2 Cup Seltzer Water
*1-2 Tbsp Sugar (add only if making for a dessert)
1 to 1-1/2 Quarts Canola Oil
Cut apricots in half and remove seed.
Place a piece of cheese in the center of one of the halves apricot. Place the other apricot half on top.
If making as an appetizer, and if desired, dice jalapeños and add 1-2 pieces in the center of the apricot with the cheese. Do not add jalapeños if you are making this dish as part of a dessert.
In a bowl, thoroughly mix together the flour, cornstarch, and seltzer water.
If making for a dessert, add in the sugar and mix thoroughly.
Heat oil on high heat.
Use tongs to pick up the stuffed apricots and dip in batter. Thoroughly coat.
Place battered apricot in oil and fry appx 1-2 min or until lightly golden.
Serve as an appetizer with spicy honey mustard, dijon mustard or sweet and spicy sauce.
Serve for dessert with vanilla ice cream.
