Well over 500,000 children are fighting cancer globally today. While others strive to find a cure…the Jessie Rees Foundation, or NEGU (Never Ever Give Up), is all about giving “CARE” to each child and family. Jessie created her fun-filled JoyJars® as a way to send hope and joy to her peers fighting cancer. Jessie Rees' father Erik tells me about NEGU, Joyjars and together we make Courageous Cupcakes.
Makes 9-12 Cupcakes
1 Box of Red Velvet Cupcake Mix
2/3 Cup Water
1/4 Cup Oil
1. Preheat oven to 350 degrees.
2. Line muffin pan with baking cups.
3. Combine the cake mix and all of the ingredients into a large bowl.
4. Mix thoroughly.
5. Spoon batter into baking cups.
8oz cream cheese (room temperature)
3-1/2 cups confectioners sugar
1 tsp vanilla
Mix cream cheese, milk, vanilla together thoroughly in a bowl.
Slowly fold the confectioners sugar into the wet mixture. 1/2 cup at a time.
Mix until smooth.
Frost cupcakes and Enjoy!
