Any shredded smoked chicken breast. Since we don't have a smoker we purchase our smoked chicken from a local butcher and BBQ.

Follow instructions for the gluten free pancake mix to make desired amount of pancakes.
For every 10-12 pancakes, add 1 to 1-1/2 cups of shredded chicken to the pancake batter.
Stir the chicken into batter so it's evenly distributed in the batter.
Lightly oil a frying pan.
Use a 1/4 measuring cup to create desired sized pancakes. (Tip: When making a pancake, look for bubbles around the edges to start forming when in the pan. This tells you the pancake is ready to turn over.)
