Knife Skills: Cutting Lesson with Chef Becky Reams
Cutting food is a BIG part of cooking. So it’s important that I learn to do it really well. Sometimes my hands have trouble using knives and other utensils the way other people use them, so I make up my own way of doing things.
But I still want to learn the regular ways of using them and cutting, and see if those ways can work for me too. There are a lot of different knives and different kinds of cuts, so it’s going to take A LOT of time and practice.
And I’m really glad that Chef Becky Reams helped me get started. Chef Reams is nice and so cool! She came an hour early to our shoot to give me cutting lessons, before we started filming the cooking episode that she did with me.
She taught me how to properly peel a mango, and to use gloves to keep my hands clean while cooking.
I learned a comfortable way for me to hold the chef’s knife to cut slices, and about cutting off the ends of a cucumber and standing it up to cut the slices. Chef Reams also taught me how to cut small cubes.
My favorite part of the lesson was learning to cut the green onions Japanese style, like blades of grass. After we cut the blades, we put them in water to wilt them a little for the garnish on the fried chicken that we made on the show. That lesson helped me so much, and I will keep on learning and practicing.
